Traditional cast iron frying pans do not come out of the box with a non-stick surface. It is created by burning or coating the pan with cooking oil and baking in an oven at 180°C for an hour. They strengthen the non-stick coating every time you heat oil in the pan and you can repeat the baking process as often as you like to accelerate.
For best results, rinse the pan with hot water immediately after boiling. To remove burnt food, rub the pan with a mild scouring agent such as coarse salt and a non-metal brush to maintain the sticky surface; you can also use a few drops of mild detergent occasionally. If the pan develops a sticky coating or rusts over time, clean it with steel wool and burn it again. To prevent rust, dry the pan thoroughly and lightly coat the cooking surface with cooking oil. Cover with a paper towel to protect it from dust.
